I’ve always loved pancakes, and I’ve generally opted for protein pancakes for the last couple of years and always stuck to the same recipe. Recently, my friend Freddy who is currently living in San Francisco was lovely and sent me ‘The Ultimate Protein Powder Cookbook’ that’s not out in the UK yet. I tried an alternative recipe and fell in love with it so I thought I’d share it all with you. I have altered a few things from what’s in the guide as I hadn’t got all the correct ingredients but had similar bits in the cupboards.
- 1/4 cup chocolate coconut impact whey
- 1 cup coconut milk – I used a chocolate one!
- 3/4 cup of porridge oats
- 1/4 cup coconut flour
- 1 banana
- 1 egg white
Mix all ingredients together in a bowl with a hand blender. Make sure you put a little coconut oil in a frying pan to melt, it only takes a few seconds if the pan is warm! Spoon the batter into the pan. My batch made around six small pancakes, of which I had three as one portion and saved the rest for the next day. When the mixture starts to bubble, flip over the pancake to cook the other side. And that’s all you need to do! Pop them onto a plate and either eat them as they are of add a little fat free yoghurt and fruit.

Protein pancakes really are one of my go-to breakfasts for when I need a bit of energy and bounce in the mornings. They’re also a healthier version of a treat breakfast. If you want to make them a little extra yummy, pop in a few dark chocolate drops to the mixture and top with fresh raspberries and some fat free vanilla yoghurt. Yum!
